Matcha (Green Tea) Strawberry Mille Crepe Cake Recipe

Ingredients

Crepe Batter

  • 1/2 teaspoon baking powder
  • 1 cup flour (gluten free optional)
  • 1 and 3/4 cup whole milk
  • 1 and 1/2 tablespoon melted unsalted butter
  • 2 tablespoon matcha powder
  • 3 tablespoon sugar
  • 3 large eggs
  • 1/2 teaspoon baking powder
  • 1 and 1/2 tablespoon butter
 
Fresh Strawberry Whipped Cream
  • 1 cup powdered sugar
  • 1 and 1/2 cups chopped strawberries 
  • 1 and 3/4 cups heavy whipping cream
 
Topping
  • Fresh strawberries
 
Directions
Crepe Batter
  1. Combine milk and sugar in a sauce pan and heat it until the milk is warm to the touch. 
  2. Whisk the eggs in a large bowl and add small amounts of milk while mixing. Slowly add the melted butter to the mixture. 
  3. Use a strainer and add flour, baking powder, and matcha powder. Add half of the dry ingredients into the batter. Combine the dry and wet ingredients together.  
  4. Repeat this process until there’s no lumps in the batter. 
  5. Put a strainer over a large bowl and pour the batter to sift all of the lumps out. 
  6. Cover the batter with plastic wrap and refrigerate for 1 hour. 

**NOTE: During the 1 hour wait, feel free to make the Strawberry Whipped Cream ahead of time**

Cook the batter

  1. Heat up a 12-inch pan on low heat. Butter up the pan and pour the batter just enough to cover the bottom of the frying pan. 
  2. Cook the first side of the crepe for 2 minutes. Make sure the edges are crispy before using a chopstick or spatula to flip the crepe. 
  3. Cook the other side of the crepe for 30 seconds and transfer over to parchment paper. 
  4. Heat a 10-inch frying pan on low heat. Butter up the pan and pour enough batter to cover the bottom. 
  5. Cook the first side of the crepe for 2 minutes. Make sure the edges are crispy before using a chopstick or spatula to flip the crepe. 
  6. Cook the other side of the crepe for 30 seconds and transfer over to parchment paper.
  7. Continue until all of the batter is used. There will be one large crepe that will cover the top of the other crepes. 

Top make the Strawberry Whipped Cream

  1. Chop up strawberries and add it to a blender to make a puree. 
  2. Add the strawberry puree, heavy whipping cream, and powdered sugar to a large mixing bowl. Whip everything together until the texture is smooth and fluffy cream.
**NOTE: Make sure to refrigerate the crepe cake for about 2 hours before eating**
